The origin of Hinamatsuri is a traditional ritual called "Joushi no Sekku" (Joushi Festival) which was originally meant to ward off evil spirits. It transformed into a festival for girls around the Edo period. For suimono, we use a special patterned kamaboko.

(Hinamatsuri), also known as Girls' Day or the Doll Festival, is a traditional Japanese celebration that takes place on March 3rd. It's a day dedicated to wishing for the health, happiness, and prosperity of young girls in Japan. Families with daughters often set up a display of ornamental dolls, which represent the Emperor, Empress, and other court figures from the Heian period.

The dolls are dressed in beautiful, intricate kimonos and are displayed on a tiered platform covered with red cloth. The festival is also associated with special foods, such as hina-arare (colorful rice crackers), hishimochi (diamond-shaped rice cakes), and shirozake (sweet white sake).

It's a lovely tradition that brings families together and is a wonderful way to celebrate and cherish daughters
